Makes and Bakes: Lemon and Ginger Biscuits



Morning! Ok, I promise not all my TTI's will be baking themed!(Update: They were, thats why I changed it ;D) but I'm just having so much fun right now with it, and when I saw this recipe I just HAD to give it a go! And I am very pleased I did, they were scrummy ^_^

 Now you have a go!


You will need:
275g plain flour
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp ground cinnamon
2 rounded tsp ground ginger
pinch of salt
225g unsalted butter, softened
100g soft light brown sugar
4 tbsp golden syrup
grated zest of one lemon
1 medium egg
1 tbsp finely chopped stem ginger
1 tbsp caster sugar, for sprinkling

For the buttercream filling:
150g unsalted butter
3 tbsp icing sugar, sifted
grated zest of one lemon
1 tbsp lemon juice

Preheat the oven to 180c/gas mark 4.
Sift together the plain flour, baking powder, bicarbonate of soda, cinnamon, ginger and salt.
In another bowl, cream together the softened butter and sugar until pale and fluffy. Mix in the golden syrup, grated lemon zest, egg and chopped stem ginger. Gradually add the dry ingredients and mix until the dough comes together in a smooth ball. Divide into two evenly sized pieces.
On a lightly floured surface, roll out one piece of dough at a time to a thickness of 3mm, using a 7cm round cutter, stamp out biscuits from the dough and arrange on parchment lined baking sheets and scatter with a little caster sugar. Continue until you have used up all your dough.
Bake one tray at a time, in the middle shelf of your oven for 10-12 mins until the biscuits are crisp.
cool on a wire rack.

To make the filling, tip all ingredients into a mixing bowl and beat together until smooth. Spread half of the biscuits with buttercream filling and sandwich with another biscuit.
